HOW IT WORKS
Within the Kefir live grains are lactic acid bacteria and the yeast that agglutinate into a corm, which when treated with milk produces an aromatic Kefir drink within 24-30 hours. In the process, the sugar that is contained in the milk is being deconstructed into lactic acid. This is why Mayside Organic Kefir is so well suited for people that are allergic to lactose. These grains are alive and will continue to grow and multiply, reaching almost double the amount in a couple of weeks.
First steps to producing your own Kefir drink you need the following:
Jars/Container (Glass, ceramic or plastic jar. DO NOT use a metal container)
Cover (Tissue, coffee filter, or linen/cotton breathable cloth secured with an elastic band to cover the jar)
Sieve (100% plastic. DO NOT use a metal sieve)
Spoon (Wooden, ceramic, or plastic. DO NOT use a metal spoon)
Whole Milk (We use organic-filtered fresh full-fat milk for the best result)
Temperature (16 C - 20 C is ideal)
IMPORTANT: Do not use metal dishes, metal spoons, or metal sieves at any stage, avoid direct sunlight and not leave fermented for more than 30 hours. (Ideal fermenting time 20-30 hours)
Next steps to producing Kefir drink:
Empty the contents of the Kraft envelope into an empty glass or plastic jar or container. DO NOT use any metal object at any of the stages of the fermentation process (use a small amount of room temperature water or preferably, cool milk to ensure all of the contents are removed from the envelope)
Fill your plastic or glass container with fresh cool milk (approximately 250ml to 300 ml for every 20 grams of Mayside Organic Kefir grains)
Loosely cover the container with a lid or use cheesecloth or a breathable clean cotton cloth and secured it with an elastic band to allow the contents to breathe, and then leave in a cool dark cupboard or other storage area and avoid direct sunlight
Leave the container at room temperature (16 C - 20 C)
After 16-20 hours you should see the process of fermentation and thickening (i.e. separation between curd and whey, the Kefir is ready to drink and ready to strain the Kefir grains for the next fermentation)
Strain off the grains by using a plastic sieve (never use a metal sieve) and the remaining liquid of Kefir is ready to drink or to store in a bottle inside the fridge for another 12-18 hours with the lid left on for a more effervescent texture of loose for a flatter consistency. You can also use the liquid Kefir to produce a thick yogurt, smoothie, and even cheese)
Next, take the strained grains, rinse them under cold water and then repeat the same procedure as in Step 1 to produce the Kefir drink again
You can suspend or slow the fermentation process if you have produced more Kefir milk than you can use in a couple of days by placing the container of Kefir grains and milk in the refrigerator
Kefir grains will ferment and grow in normal cow's milk, goat's milk, or even sheep's milk. Soy milk, rice milk, almond milk, or coconut milk can also be used. However, Kefir grains may stop growing if the type of milk used does not contain all the growth factors required by the bacteria. You will experience the best results with organic, fresh, filtered full-fat milk in a glass or plastic bottle.
